Baked Eggs with Veggies! This is an exceptionally easy and exceptionally tasty meal, and you can adjust its size to fit your appetite. I made enough for two (or one, if you're as hungry as I usually am) and baked it in a 1 qt. bread pan. I'm not sure if this is the ideal baking tool for this dish, but it's what I had at the time. Hooray, grad school kitchen. My measurements for this aren't exact, since I sort of just threw stuff in there until it felt right. You can use more or less vegetables and eggs depending on the size of your pan (mine was filled up about 2/3 of the way with stuff before I popped it in the oven), but here's what I used: 2 eggs About half of a red onion, diced 1 red bell pepper, diced 1 heaping handful of sliced baby bellas Like 2 big handfuls of spinach 1-2 tablespoons of olive oil Salt, black pepper, rosemary and thyme to season Preheat your oven to 400 degrees F. Sautee the onion, bell pepper, and mushrooms in olive oil very briefly before throwing them in with the rest of the veggies--probably not even a full two minutes, but just long enough for them to soak up a bit of oil and yumminess before baking. You can use a mixing bowl to toss your veggies with olive oil, or, if you're feeling messy (like I always am), you can throw everything in your pan/dish/whathaveyou and mix it all together in there. I can't be precise about the amount of oil I used, but it was enough that all of the vegetables were very lightly coated. Sprinkle your veggies with salt, pepper, rosemary, and thyme (or whatever spices float your boat) in whatever quantities seem pleasing to you, then toss everything again so the seasoning is evenly distributed. Transfer your veggies to your pan if you haven't already, then use a spoon to make 2 (or more if you're using a bigger pan/making a bigger meal) holes for the eggs. Kind of like little egg-nests. Or egg-wells. However you want to think of them, they're where your eggs will bake. Sprinkle a bit of salt and pepper (or whatever you'd like) on the eggs, then pop that sucker in the oven. Bake until whites are set but yolks are still runny. This will take around 15 minutes, but I strongly advise that you keep an eye on it, especially if you are picky about your yolks. Then munch! Eggs. Veggies. Oil. Bam. Awesome breakfast/dinner/whatever.
