right so what you’re going to do is cut up 2 onions per person into fine slices then chuck em in a medium hot pot with a bit if oil and let it caramelise until dark golden brown before adding salt pepper and diced garlic till that smells good then deglaze with some cheap dry white wine or water give it a stir then about a cup more veggie stock than you want soup with a sprig of thyme and a bay leaf or whatever herbs you fancy optionally but recommend throw in some potato cubes for bulk simmer until the potatoes are soft and it smells good serve with toast and enjoy the sunrise
