15 pounds since January 1st! I really enjoyed the holidays ššš© but started off the new year with a lot of goals for 2020. One of them is getting back down to my lowest weight/pant size so I eliminated most sugars, lowered my carb macros (and try to make most of them come fruits and vegetables), increased my protein and water intake. I've only been working out 3 times a week but I make sure my sessions include weight lifting and cardio. I got to spend yesterday afternoon with these amazing Zumba instructors (and a few yogis). While we were all auditioning for positions with the same company it didn't feel like there was a single ounce of competition going on in that room. Southwestern Chicken Dinner
Serve this flavorful Southwestern Chicken Dinner with a heaping side of dark leafy greens. This is the epitome of a meal focused on protein and fiber. Itās meals like this that will melt off body fat and improve your health and fitness. Enjoy!
What You Need Serves 6
2 lbs organic chicken breast Dash of sea salt and black pepper 1 Tablespoon coconut oil 1 small yellow onion, chopped 1 tomato, seeded and diced 2 Tablespoon chili in adobo sauce 1 Tablespoon chili powder 1 Tablespoon balsamic vinegar 1 teaspoon ground cumin ½ teaspoon sea salt ¼ teaspoon ground cinnamon
Instructions
1. Rinse the chicken breasts and pat dry. Butterfly cut the chicken, opening each breast up like a book. Sprinkle both sides with salt and pepper. Place the chicken in a baking pan and set aside in the fridge as you prepare the sauce.
2. Place the coconut oil in a skillet over medium heat. Add the chopped onion and sautƩ until soft, about 5 minutes. Add the remaining ingredients and continue to cook for about 10 minutes. Use a hand blender to puree the sauce until smooth.
3. Coat the chicken with half of the sauce and marinate for 30 minutes. Preheat the oven to 350 degrees F.
4. Cover the chicken with foil and bake chicken for 30 minutes in the preheated oven. Serve warm with a spoonful of the reserved sauce. Enjoy!
Nutrition One serving equals: 304 calories, 17g fat, 336mg sodium, 5g carbohydrate, 1g fiber, and 18g protein.

Cheesy Cauliflower BreadstcksĀ
INGREDIENTS
1 medium head cauliflower
1 egg, beaten
1 cup mozzarella cheese, shredded, divided in half
½ cup shredded parmesan cheese
4-6 fresh basil leaves, finely chopped (or 1.5 tsp dried basil)
2 cloves of garlic, minced (or ½ tsp garlic powder)
1 teaspoon dried oregano
INSTRUCTIONS
Preheat oven to 425 degrees F.
Rinse and chop cauliflower into florets.
In a blender or food processor, pulse cauliflower until it has a āriceā consistency.
Heat about 1 inch of water in a large saucepan until it boils.
Add the cauliflower and cover with a lid. Steam for about 5 minutes and remove from heat.
Drain the cauliflower in a fine mesh strainer, pressing against edges with a spatula. Let it cool for a few minutes.
Place cauliflower in a clean dish towel and wring out as much excess water as possible.
In a large bowl, add cauliflower, ½ cup mozzarella cheese, 1 egg, garlic, chopped basil, and oregano. Stir well.
On baking sheet lined with parchment paper, use your hands to form the cauliflower mixture into a rectangle covering just about the whole pan.
Bake for 30 minutes, until crust is golden brown. Remove from heat.
Top crust with the rest of your mozzarella and parmesan cheese, and bake for another 7-10 minutes. (Once cheese is melted.)
Remove from heat, and cut into ābreadsticksā with a pizza cutter.
Serve warm with marinara sauce and enjoy!
