Paleo Carrot Cake Muffins
Paleo Carrot Cake Muffins Yield: 12 Muffins Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes Ingredients -2 1/4 cups almond flour -1/2 teaspoon baking soda -1/2 tsp sea salt -2 tsp ground cinnamon -1 tsp ground nutmeg -1/2 tsp ground allspice -1/2 tsp ground cloves -1/2 tsp ground ginger -3 tbsp ghee or coconut oil, melted -3 eggs -2 tbsp honey -1 tbsp vanilla extract -3/4 cup shredded carrot (about 1 medium carrot) -1/2 cup raisins (optional) -1/2 cup chopped walnuts (optional) -1/4 cup shredded coconut (optional) Directions -Preheat oven to 350 F. -In a large bowl, add almond flour, baking soda, salt, cinnamon, nutmeg, allspice, clove and ginger. Mix well and set aside. -In a separate bowl, add melted ghee or coconut oil, eggs, honey and vanilla into a bowl. Whisk until smooth. -Pour wet ingredients into bowl with dry ingredients and mix well. -Stir in shredded carrot and your mix-ins. -Spray a muffin tin or line with muffin liners. I also spray the liners just for a little extra insurance that the muffins won't stick. -Pour about 1/4 cup of the batter into each tin until they are all evenly filled. Each tin should be about 3/4 full. -Bake muffins for 18-20 minutes (until a toothpick entered into center of the muffin comes out clean).

Paleo Pumpkin Bars
Pumpkin Bars
Ingredients:
2/3 cup sifted coconut flour
1 cup almond flour (or 3/4 cup almond flour and 1/4 cup arrowroot)
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
7 eggs
3/4 cup honey
1 cup coconut oil (or 1/2 cup coconut oil and 1/2 cup applesauce)
1-15 oz. can pumpkin puree
1 tsp. apple cider vinegar
Directions: 1. Preheat oven to 350 degrees and grease a 10×15 inch pan.
2. Stir together flours, cinnamon, baking soda and salt in a medium bowl.
3. Combine eggs, honey, oil, pumpkin puree and apple cider vinegar in a separate, large bowl.
4. Add the dry ingredients to the wet and stir until well mixed (I like to use a hand mixer).
5. Pour the batter into the prepared 10×15 inch pan and bake at 350 degrees for 15-25 minutes. (Bars are done when you insert a toothpick or knife and it comes out clean.)
6. Cool completely. Serve plain or with Creamy Frosting (see below).
Creamy Frosting
Ingredients:
1/3 cup butter*, softened
1/3 cup coconut oil (not melted, but room temperature)
1/4 cup honey
1 tsp. vanilla
2 Tbsp. cashew butter (optional)
1/2 tsp. lemon juice (optional)
Directions:
1. Mix all ingredients until well blended and fluffy!
2. Spread on COOLED bars. Enjoy!
*You may make this frosting with all coconut oil to eliminate the dairy, but the consistency and texture will be different. It should still taste yummy though!

Grain-Free Coffee Cake
Cake Ingredients:
2/3 cup honey (UPDATE: You can vary this depending on your tastes–I’ve been told 1/4 cup works just as well!)
1/4 cup butter, melted
4 eggs
1/2 cup almond milk
3/4 cup arrowroot or almond flour
3/4 cup sifted coconut flour
2 tsp. baking powder
1/2 tsp. salt
Cake Directions:
1. Preheat oven to 350 degrees. Grease or butter an 8×8 baking pan.
2. Combine honey, butter, eggs and almond milk in a bowl until well combined.
3. Combine arrowroot or almond flour, coconut flour, baking powder and salt in a separate bowl.
4. Mix dry ingredients into wet ingredients. Stir well.
5. Pour HALF of the cake batter into the prepared cake pan and spread out evenly.
6. Prepare streusel.
Streusel Ingredients:
1 cup chopped pecans
2 Tbsp. honey
1/4 cup butter
1 1/2 tsp. cinnamon
1 tsp. coconut flour
Streusel Directions:
1. Combine all the streusel ingredients in a bowl.
2. Distribute half of the streusel over the batter in the pan.
3. Pour the rest of the cake batter on streusel and top with remaining streusel.
4. Bake at 350 degrees for 28-35 minutes. Remove from oven when a knife inserted in the middle comes out clean.
5. Serve as is or slather in butter!
