Got to try the new vegan menu out at Rocky Mountain Flatbread Co in kits last night! Their whole menu is made from locally source, whole foods. Avocado Veg Pizza & the harvest pizza were my favourites!
ONE POT SWEET POTATO CHILI [less than an hour to make]
INGREDIENTS * 1 medium white onion, diced * 2 tbsp olive oil * 3 small sweet potatoes, diced (about 1 pound) * 1 ½ teaspoons sea salt + more to taste * 1 ½ teaspoons garlic powder * 3 tablespoons chili powder * 3 ½ teaspoons cumin * 3 ½ cups vegetable broth * 1 cup water * 1 cup quinoa, uncooked * 1 can kidney beans, drained and rinsed * 1 can black beans, drained and rinsed * 1 can corn kernels, drained and rinsed * 1 cup cherry tomatoes, halved * ¾ can diced tomatoes, drained * 1 pinch cinnamon
INSTRUCTIONS 1. In a large pot over medium heat, cooked diced onion in the olive oil until translucent and soft. 2. Add diced sweet potato and sea salt, garlic powder, chill powder, cumin. Cover and cook for 5 minutes over medium heat. 3. Add the vegetable broth and water. Bring chili to a boil on medium high heat, then switch to medium-low and simmer. 4. Add quinoa, both types of beans, cherry tomatoes, corn, cinnamon and diced tomatoes. Cover and cook for 30 minutes on medium-low. 5. You’ll know its done cooking when the sweet potatoes are tender and the chili is thick. If its too thick, add more vegetable broth.
Serve with whatever toppings you like! We used cilantro, chopped avocado and salsa!

Thankful to have a vegan family to celebrate thanksgiving with! Pictured our two tofurky roasts here that came with stuffing and animal-free gravy. Still had mashed potatoes with vegan butter, yorkshire pudding, and a bunch of roasted veggies. Justine showing that you don't have to miss out on holiday meals by eating plant based! 🤗
Apple Cinnamon Compote with whole wheat pancakes: 4 servings
- 3 Macintosh apples - peeled, cored, chopped
- ½ cup raisins
- 2 tbsp brown sugar
- 1 tbsp vegan butter (I used Earth Balance Buttery spread)
- 1 tsp cinnamon
- ½ teaspoon vanilla
- pinch salt
- splash water
1) Add the butter and apples into a pot over medium heat, cook for ~3 minutes
2) Add the brown sugar and cinnamon, cook for ~3 more minutes
3) Add the raisins, water, vanilla, and salt, cook until apples are golden
4) Simmer until apples are soft and raisins are plump ~ 3 minutes
Easy pancake recipe
- 2 cups boxed pancake mix (dairy free)
- 2 cups dairy free milk - I used almond milk
- 2 bananas (in the place of eggs)
1) Mash the bananas in a bowl with a fork
2) Add the milk and pancake mix, stir until combined
3) Cook on medium heat, flip when you see air bubbles in the batter
