You’re missing the point of this post. Italian food from Italy isn’t more authentic or inauthentic or more valid than American Italian food. It’s just a different strain. American Italian food is like because of Italian immigrants and what is available is the US vs Italy. Italian food from Italy is different because of what was available in Italy. If we’re gonna split hairs on this point that food is only authentic if made in that country with ingredients from that country than any Italian food from Italy made with tomatoes isn’t authentic because tomatoes ade not from Italy they are from the Americas.
