olive oil greek yogurt biscuits recipe
2 cups ap flour
¼ c evoo (try a little butter too of you need that scent of butter)
4 tsp baking powder
½ tsp baking soda
¾ tsp kosher salt
½ cup milk of choice
preheat toaster oven 450⁰f
combine flour, baking powder and soda, salt in a bowl. add evoo. mix and crumble with fingers.
in small pyrex combine all milk and yogurt. add to flour with wooden spoon. dough will be sticky.
dust a small ¼ sheet nordicware pan. shape the dough and fold a few times. press dough 1" thick. use cutter to cut into 6 biscuits, about 2" diameter.
place cut biscuit dough onto parchment paper ⅛ sheet nordicware pan. have to dough touch the other dough, it will rise better.
bake for 12 minutes or until golden brown.
note: feel free to add choco chip, dried cranberries, or top with cinnamon and sugar. sky's the limit.
