Turkey and Walnut Pesto Fettuccine

Less than 24 hours after Thanksgiving ended, the leftover mashed potatoes were annihilated by everyone who passed the refrigerator while the leftover steamed peas remained unsurprisingly untouched. Despite munching on turkey for the past couple of days, there is still a big 2+ liter container of de-boned roasted turkey that looks like it has barely been touched. That’s a lot of sandwiches, leftover Thanksgiving pot pie, and quesadilla.

One thing I haven’t done with the turkey is toss it into pasta, so I made this today:

You can’t go wrong with turkey and pasta, and there are a lot of pasta dishes I want to make/try. Turkey fettuccine alfredo, turkey tetrazzini, turkey ravioli…😋 Good thing I have all that leftover turkey.
