in the bear cam community we call this behaviour High Grading -- in times of very plentiful salmon, or when the bears start getting full, they will eat the fattiest and most nutritious parts of the salmon (skin, brain, and roe) and then drop the rest.

this enables the bears that are high grading to fit more calories in their stomachs, and the remainder of the fish gets eaten by other animals, including younger/smaller/less dominant bears, eagles, seagulls, and any number of small scavenger mammals. what doesn't get eaten by animals absorbs into the soil, which is really important for the overall health of the ecosystem -- coastal alaska requires Salmon-Derived Nutrients in order to function the way it does!
