The least favourite thing that Jones hates about his appearance is the constant infestation of barnacles. They're coarse, rough, irritating and they seem to get on every inch of his clothing and his crab arm and leg. It's a hassle carving them off and he does it every single month.
Jones absolutely despises the sound of instruments being played terribly, especially the pipe organ. He cringes hearing people play musical instruments that have only just began learning them or if they are below his level of expert playing.
On the topic of music, Jones couldn't live without his pipe organ. It's one of the vital things that keeps him from ascending into utter madness and without music to comfort him, Jones would have no idea how he could live life without it.
Another thing is his first mate, Maccus. He is the only connection he has back to his youth as they had both grown up together and had faced life's biggest obstacles. Though he will never admit it out loud, Jones has a deep fondness for Maccus and cares deeply about him. If he didn't have Maccus, then he wouldn't be able to live further on.
And finally, his silver locket. It plays the only melody that his mother once sang to him as a child long ago during restless nights and it soothes him. But it also saddens Jones deeply, as Calypso carries the same locket that he gifted her as a token of his love for her and only reminds him of the time he had spent with her.
Jones makes it his vital mission to hide away his more sensitive and human side away from the crew (with the obvious exception of Maccus) and especially regarding any newcomers on the Flying Dutchman. He sees his humanity as a weakness as it got him into his cursed situation in the first place. Jones also defines his love and emotions as vital weak points as well and keeps those feelings firmly buried deep within himself.
