These gingerbread muffins are a delightful copycat of Starbucks' gingerbread loaf. They are spiced to perfection and make for a delicious treat during the holiday season or any time of the year.
Ingredients: 1 1/2 cups all-purpose flour. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground cloves. 1/4 tsp ground nutmeg. 1/2 tsp baking soda. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup molasses. 1 large egg. 1/2 cup buttermilk. 1 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, whisk together the flour, cinnamon, ginger, cloves, nutmeg, baking soda, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the molasses and egg until well combined. Stir in the buttermilk and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix. Divide the muffin batter evenly among the lined muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
