I realize the answer will probably depend on the individual, but what is the polite way to get a Deaf person's attention when they are not looking in your direction?
There are several options, and as you mentioned, you should probably get the person’s prefered way while getting to know them. (this is not all the possible ways just some more popular and well known ways)
1. Turn the light off and then on (do not rapidly switch the lights. not only is that annoying, but it can set off epilepsy in some people)
2. Tapping the person on the shoulder or other appropriate area such as a knee or arm according to where you are in respect to the person. Note that some people may not enjoy this method and I personally would not use it if the person did not know there were others in the room/area.
3. Stomping on the ground. No, seriously! this causes vibration in the floor and the person will look to who wants attention. May want to avoid this method outside (vibrations are muted) or if you have fussy neighbors.
4. Waving at someone to point in your direction/getting in their line of sight and waving at them. deaf people are usually much better at catching motion around them then hearing people (this is pretty self explanatory i think but if not let me know.
5. If you have their phone number, send them a text!
6. Stare very intensely at them. They will probably feel you. (dont do this to strangers or people you just met please. it will make you seem creepy)

Not rude at all! I've been steadily losing my hearing for years and recently lost a lot at once, I've got little to no hearing in my left ear and I have about 40-50% of my hearing left in my right ear so without my hearing aids I'm SOL for understanding sounds haha
