Just rewatched Death High Cost of Living and it kinda got me thinking about what the Endless know about people. They seem to know random plot-convenient facts about the people around them, and not know other things. So here are my headcanons:
I think Death knows about life. She knows what Sexton does for a living (journalist, even the random thing about collecting vintage things), and a bit about his love life, but she doesn't know his feelings, she gets surprised when she notices he's miserable.
I don't think Despair would be surprised. I think she would know that just by looking at him, and she might also know everything bad that has ever happened to him. But I don't think she'd know about his vintage toy collection or anything.
Dream seems to know stories about people ("Lushing Lou"'s story for example). I think he picks up on them like people would pick up on smells, I think he finds them in the air like one would find shells on a beach. He also knows dreams, of course, (he describes the dreams of everyone in the diner in 24/7) and the stories you tell yourself to justify your actions (the collectors)
Desire would know what you want, what you've always wanted, and what you once wanted. Personally, I also like to imagine they'd know what you like in general, what "makes your heart light up". And maybe they'd also know what repells and disgusts you. Because I like Desire so I give them extra powers.
Destiny knows what is, and what will be. He doesn't know what isn't -This is stated in the comics, he doesn't have much knowledge of what's in Dream's realm. -We barely see him interact with humans. I think he's pick up on paths and choices, and probabilities, but he wouldn't know much about what drives you to choose either way. I think Destiny's knowledge would actually be the most "superficial", despite being the most impressive. He knows basic facts about the future but not too many details, is what I mean.
Delirium has the opposite problem. Her knowledge is so specific that it can hardly be useful. I think Delirium would look at a college student and see gum under desks, chewed up pens, noisy cafeterias and a plate of sludgy minced meat that is gray and tastes like vomit. She's made of these in-depth random facts. When you combine all them, you get her realm.
Destruction used to know about change, growth and decay. He'd know who you used to be and who you are now and would probably congratulate someone on their transition or on their mental health progress. He'd be proud of a child for who they're growing up to become. He'd know if a middle aged man's back has started to ache and if someone's lungs can't stand their smoking for much longer. Since he abandoned his realm, he no longer knows these things as sharply or specifically, but he still has a certain sense/intuition for them.
Well, yeah. I hope you liked my headcanons. Some of them are actually canon and some of them I made the fuck up but they're all in my head, so they're headcanons ok?
