Tomato Biscuits
Biscuits are pretty common during Thanksgiving dinner. Rich, buttery, flakey, hot -very hard not to have more than one. And it's Thanksgiving so hey, counting calories is practically taboo. Save all the guilt for tomorrow. That's not the case with this tomato biscuit recipe. At only 145 calories a piece, it's okay to not feel guilty after you've scarfed down your third.
Tomato Biscuits
Serves: 12
1 medium tomato, seeded and finely chopped
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup low-fat plain yogurt
1/3 cup olive oil
2 tablespoons finely chopped scallion
1 tablespoon finely chopped sun-dried tomato
1. Preheat oven to 450°F. Lightly coat baking sheet with nonstick cooking spray. Drain chopped fresh tomato on paper towels.
2. In medium bowl, combine flour, baking powder, and salt. In small bowl combine yogurt and oil and stir into flour mixture until evenly moistened.
3. Stir fresh tomato, scallion, and sun-dried tomato into flour mixture. Drop dough, 1/4 cup at a time, onto prepared baking sheet, for total of 12 biscuits.
4.Bake until tops are golden brown, about 12 minutes. Serve warm.

Healthy Chocolate Pecan Pie
A healthy, chocolate pecan pie -sounds like an oxymoron. But believe it or not, this recipe is vegan, gluten-free, AND delicious! Serve this for Thanksgiving dessert and no one will know that decadent taste only packs 245 calories (normally between 430-610 calories/slice). Saves you some calories for the rest of your dessert course ;)

Comfortably serves 6
1 cup pecans (plus extras for garnish)
12.3 oz silken-firm tofu, lite or regular (one Mori-Nu package)
2 tsp pure vanilla extract
1/4 tsp salt
2 tsp cornstarch or arrowroot
1/2 cup agave or maple syrup (See nutrition link, below, for a sugar-free idea)
1/2 packet stevia, or 1/2 tablespoon sugar (or more or less, as desired)
2 T molasses (or more agave, if you don’t want a molasses flavor)
2 T cocoa powder
Blend all ingredients, except pecans, in a food processor until very smooth. Then add the pecans and pulse a few times until they’re chopped. Pour into a prepared pie crust, and top with additional pecans if desired. Bake in a preheated oven at 350 degrees, for 45 minutes. If you serve the pie immediately, it’ll be very gooey (not necessarily a bad thing). But if you let it chill in the fridge, it firms up quite nicely the longer it sits.The pie fills up a prepared graham-cracker crust. If your crust is bigger, you might want to make 1 and 1/2 servings or even double the recipe.
