Mataziz by Norah Dowaihi Aldowaihi
AL-MUTAZIZ is one of the popular dishes in Saudi Arabia, characterized by a combination of flavors, and the great food benefit of whole wheat flour, meat and vegetables appetite.
Ingredients :
The dough :
3 cup flour
1/2 teaspoon salt
Al-Mutaziz :
1 kg lamb, cut into large pieces
2 zucchini cut into slices
2 medium size eggplant, peeled and sliced
1 pumpkin, small and peeled and cut into strips
3 carrots, cut into strips
4 Lumi (dried acid)
4 tomatoes, cut into cubes
2 onion medium size, finely chopped
1 red pepper, hot and minced
1/2 cup margarine
1 tablespoon tomato paste
1/4 teaspoon black pepper
1/4 teaspoon dry coriander
1/4 teaspoon soft cinnamon
Salt to taste
For Decoration:
1 onion, cut into cubes
How to make it :
1- To prepare the dough, sift the flour, add the salt and nearly a cup of water, and then knead the ingredients until they become a paste. Cover with a cloth and leave to rest for 30 to 40 minutes. 2- To prepare the broth, sauté the onions with ghee until they become golden brown, then add the pieces of meat, lumi and red pepper. Mix the ingredients well and leave on the fire until the color of the meat changes slightly. 3- Add the tomato paste and leave on low heat for 10 minutes, then add the tomatoes, black pepper, ground coriander and cinnamon. 4-Mix well and then be immersed in water. Cover the pot and leave on fire for 45 to 55 minutes until the meat is slightly cooked. 5-Add all the remaining vegetables to the meat mixture, then cover the pot and leave on medium heat until the vegetables are well cooked. 6-Divide the dough into egg-sized pellets, then add the pellets in the form of flat circles and add to the meat and vegetable stew. Leave the pot on medium heat for another 10 to 15 minutes until the dough is cooked. 7-Pour the mixture into a large serving dish and decorate with fried onion cubes
