I love a good #leftovers #lunch, especially at the end of the week when I need something to eat, like now! Quinoa and herb salad (baby spinach, basil, parsley and mint, with a few currants thrown in for good measure) and slow roasted pumpkin. Last night we had this with salmon, and today I topped it with a fried egg, a few toasted hazelnuts and loads of sumac. Delicious. I just ran into the amazingly inspiring @gkstories and @luisegreenkitchenstories whilst on my way out of yoga.
