Sunday evenings are more palatable after an @eagles victory. They played so well today. I’m going to go out on a limb and predict that this 2021-2022 season, the Birds will go undefeated. Sweet!!! You heard it here first. A girl can dream… 🏈🦅 On another note, yesterday we celebrated one of my favorite human beings, my brother Ricky. Ricky is an exemplary husband, father, son, brother, uncle, cousin, friend and the list goes on. On occasion, I will say the following to Ricky: “Ricky, you’re my little brother, but I look up to you.” He responds, “Stop” or “You’re crazy.” That’s the beauty of it. Yes, Ricky is great but, more importantly, he is humble. The menu for Ricky’s birthday has been the same for as long as I can remember: Alcapurrias. Alcapurrias with a side of Pastelillos/Empanadas. I typically go into the Alcapurria ingredient/prep process, sans this year. Suffice it to say that Alcapurrias are pockets of love and deliciousness that satiate body and soul alike. Pastelillos too. I will say this, Alcapurria prep is tedious. Not for the weak. This labor of love, however, is so worth the product yielded. In years past, the entire Santiago clan participated in said prep. This year only Ricky’s immediate family carried out what, to me, is a gargantuan task. Kudos to them!!! All ate and imbibed heartily. Oh, and Ricky’s birthday cake can only come from @stocksbakery. Classic, just like him.
