After seeing this recipe a few times a I decided to give it a try. These could be used for much more than tortillas. I took 2 and made a grilled cheese with goat cheese, sautéed garlicky kale & spinach, mozzarella, and topped with a drizzle of balsamic vinegar. I'm thinking they would be a good alternative to pasta in lasagna too! The trick with these is to make sure they are thin. Recipe is from whiteonricecouple.com Zucchini Tortillas 4 cups zucchini grated 1 egg 1/2 cup Parmesan cheese 1/4 cup gluten free bread crumbs 1/2 tsp pepper 1/4 tsp sea salt 1/4 tsp garlic powder 1/4 tsp cumin Preheat oven to 450 & prepare a couple sheet pans with parchment. In a glass bowl cook grated zucchini in the microwave for 2 minutes. This loosens up the moisture so you're able to squeeze out as much as possible. You don't want to fully cook the zucchini. I put the zucchini in a fine mesh strainer and gave it a few good squeezes till there wasn't much moisture draining. You can also place in a thin dish towel and ring out the moisture. Place in a bowl and add the remaining ingredients. Mix until combined. Use about 1/4 cup of the mixture for each tortilla. Press down the mix with your fingers on parchment till you have a thin, 5 inch round, tortilla shape. Bake for 25-30 minutes till the edges are dark and tortilla is browned. Let them cool before removing the tortilla from parchment paper.
