Although cooking fried rice isn’t what everyone calls baking I didn’t want to change the name of this title just in case I turn theses cooking/baking blog post into a cooking/baking book.
This man who came into my family home seeking accommodation just while he was looking for a new house he was very nice man. He swept our kitchen floors just because he was waiting on an important phone call, no one asked him to. he insisted to cook dinner for us. He cooked this delicious spicy fried rice, he said that he was making the recipe up as he goes along whether he meant all the ingredients or just the sauces and spices I’m not sure.
After he made it for dinner I thought considering my family and I eat kind of the same meals most nights (which is fine, I don’t mind) I thought I would organise a cooking lesson with the man himself who cooked and served up the delicious home cooked fried rice.

Raw Sugar – sprinkle of it
Half a bag of Jasmine Rice (made in Thailand)
Whole tin of salt water Tuna – without the tuna water

Prepare the Jasmine rice by pouring half a bag into a saucepan, when filling the saucepan up with water, mix the rice till water becomes cloudy. Keep rinsing the rice water till water become clear.
At a medium heat drizzle extra virgin olive oil in a pan just so it is covered. wait till the oil has heated up in the pan, then toss in the carrots. Cook for about 10 minutes or when they are soft; push the carrots to one side.
Add the diced onion and cook till golden or at least 10-15 minutes, meanwhile put the saucepan of rice on and wait for all the water to evaporate this should take no longer than 20 minutes. once the onions are done push them to one side and add in the chopped capsicum, cook for 10 minutes when 10 minutes is up put the chopped garlic into the mix, stir the garlic till golden. (the garlic takes about 5 seconds to cook) push the garlic to one side.
Add diced tomato and cook for about 10 minutes. Push tomatoes to one side and then add an 1 egg and scramble till all of it is cooked; Add in the pees and stir for 5 minutes then add in the tuna and mix all of the ingredients together, add in all the rice.
At this stage it is time to add in all the different sauces; but first sprinkle over some raw sugar over the meal. Drizzle Soy Sauce and Fish sauce all over then stir. Add a few dollops of Chili Sauce and Hosier Sauce then stir. Sprinkle a tiny bit of chili flakes over the meal and stir once again. keep stiring till all of the rice is covered in flavour or till it goes brown.
Serve it onto plates, then bobs your uncle you’re done! :)
