I have a confession: this recipe idea started out as a healthier spin on Pop Tarts but then as I started to actually make them I realized that I don’t have the skills to actually cut things into neat, even rectangles.

Sweet potato brownies

Recipe adjusted from fivesechealth

Ingredients:

4 baked and peeled sweet potatoes (about 450g)

75g almond flour

60g oats

1,5 dl cacao powder

4 tbsp agave syrup

2 tbsp fiber syrup (I used this)

2 tbsp chocolate stevia powder (I used this)

Topping (optional):

Vegan chocolate protein powder (I used this)

Water

Nuts or berries (I used cashews)

Instruction: - Set the oven to 180C/350F. - Add all ingredients into a food processor and mix until smooth. - Pour the batter into a baking dish and put in the middle of the oven for 25 minutes. - When the brownie is done, leave to cool so that it will be easier to cut. - Now you can mix you protein powder with a little bit of water at a time so that you get the right consistency. - When the brownie has cooled, cut into 8 pieces with a sharp knife. Top with the protein cream and nuts or berries of choice, then enjoy!
