Almost-Cake: Blueberry Protein Muffins
These really do taste like cake. I could have just eaten the batter, but I know I’m not supposed to, what with the raw eggs and all. Anyway, this recipe is amazing. If you want a quick hit of protein and a sweet snack, make these.
The recipe makes about 12 muffins
- non-stick cooking spray
- 1 cup vanilla protein powder
- 1 cup oat flour
- 2/3 cup honey
- 1 tsp. baking soda
- 1 tsp. baking powder
- A dash of Kosher Salt
- 1 1/2 cups nonfat, plain greek yogurt
- 2 eggs, beaten
- 4 tablespoons earth balance, melted and cooled (you can use olive oil or another butter substitute, but I can’t vouch for it).
- 1 tbsp. vanilla extract
- 1 pint of fresh blueberries
* Heat oven to 350.
* Coat muffin tin with cooking spray
* Combine everything except blueberries into a mixing bowl and mix it all until it's super smooth.
* Fold in the blueberries, reserving a few to top the muffins
* Spoon into muffin tins - and top with 3-4 blueberries
* Bake until top is golden - about 30 - 35 minutes.

Pumpkin "Cheesecake" Bites
I bought some tofutti a week or so ago and just didn't find myself eating it as much as I thought I would. Not one to waste, I baked it. And I'll buy more again - because these are SOOOO good. And easy. The texture is super smooth, almost like little crepes. Ooooo ... we should add nutella next time.

2 egg whites
5 oz. tofutti (you can use real cream cheese, but it upsets my stomach)
2 scoops (64 (g)). Cinnamon Protein Powder (or 64 (g) vanilla protein powder + 1 tbsp. pumpkin pie spice)
1 cup nonfat cottage cheese
1 cup pumpkin purée
1.5 tsp. splenda extract
3 drops vanilla splenda
1 tbsp. cinnamon
Preheat oven to 350 degrees. In a blender, combine all of your ingredients and blend until creamy. I ended up mixing all of my ingredients together first, then blending them because my blender sucks and I didn't want the powder to get stuck on the sides. Spray 2 mini-muffin tins with non-stick spray and pour the batter into each muffin. I ended up having some leftover and no extra muffin tin, so I put the leftover in a cooking pan and figured I'd make bars.
Bake for about 30 minutes. Let them cool and store in the fridge. AMAZING!

I am looking for a good protein powder to use in baking, etc. I notice a lot of your recipes call for it. What would you suggest?
Hi! I don't have a favorite brand of protein. I usually buy a whey isolate without any added flavor or sweetener from a generic brand at the supplement store as my main protein powder.
When it comes to flavored proteins (vanilla, chocolate or others), I like trying new flavors and brands to switch things up. Companies I like are About time, Sun Warrior, and Gold Standard Natural.
When choosing a powder make sure it's low fat (1-5 grams is ok), low carb (1-5 grams is ok) and high protein (normally about 20-30 grams per serving). When it comes to flavors and sweeteners, it's generally safer to go with natural flavors and sweeteners (or just ask for a plain, generic whey protein isolate without any bells and whistles).
Whey is great for postworkout, but if you're looking for a protein powder to eat late at night or as a snack when you're inactive, pea protein powder or casein powder are great choices because they'll keep you feeling full longer.
Protein powders you want to avoid are mass gainers (usually marketed towards guys who want to gain size) and all kinds of meal replacements (usually marketed towards women).
Don't hesitate to ask for samples at the supplement store, or buy one-serving packagings before investing in a powder to see if you can digest it well and if you like the taste.

Just made some protein-packed banana bread which smells AND tastes so good!
I adapted from Espresso & Cream's recipe
Ingredients *3 medium ripe bananas, mashed ( I left the mash kindof chunky and the little banana bits in the slice gave a nice texture) *3 tablespoons Olivio coconut spread *1/3 cup 0% Greek yogurt *1 and a half scoops of vanilla-flavored protein powder *1/4 cup no-calorie natural sweetener (I used Ideal) *1/4 cup no-calorie natural brown sweetener (again, I used Ideal, brown sugar variety) *1/4 cup egg whites *1 teaspoon baking soda *1/4 teaspoon salt *2 teaspoons vanilla extract *2 teaspoons ground cinnamon, divided *1/4 cup ground flax meal *1 1/4 cup cups unbleached whole-wheat flour *2 tablespoons natural almond butter *2 tablespoons vanilla flavored soy milk (I used Silk Vanilla Light) *2 tablespoons rolled oats
Instructions *Preheat oven to 350°F. Line a 9x5-inch loaf pan with aluminum foil (or spray with Pam, as I did); set aside. *In a large bowl, beat together the bananas, butter, yogurt, protein powder, sugar, brown sugar and egg whites. Beat until well combined. Add in baking soda, salt, vanilla extract, 1 tsp cinnamon and flax meal. Stir until combined. *Beat in flour until just combined. Reserve 1/2 cup of the batter. Transfer remaining batter to loaf pan. Stir almond butter and milk into the reserved batter and stir until combined. Spread peanut butter batter atop batter in loaf pan. Run a knife through to evenly distribute peanut butter batter layer. Sprinkle top with remaining teaspoon of cinnamon and the rolled oats. *Bake for 50-60 minutes, until golden brown on the surface. Transfer to a wire rack to cool.
