This scrumptious and healthy beef tips over rice dish is packed with flavor and nutrients. Tender beef sirloin is cooked with a medley of vegetables in a savory sauce, then served over fluffy rice for a satisfying meal.
Ingredients: 1 lb beef sirloin, cut into small cubes. 1 tablespoon olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup sliced mushrooms. 1 cup beef broth. 2 tablespoons soy sauce. 1 tablespoon cornstarch. Salt and pepper to taste. Cooked rice, for serving. Chopped parsley, for garnish.
Instructions: Warm up the olive oil in a big pan over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the beef cubes until they are browned on all sides. Take it out of the pan and set it aside. Put the mushrooms, onion, garlic, bell pepper, and onion in the same pan. For about 5 minutes, cook until the vegetables are soft. Mix beef broth, soy sauce, and cornstarch in a small bowl with a whisk until the cornstarch is gone. Add the beef broth mixture to the vegetables in the pan. Turn the heat down to low and cook for about two to three minutes, until the sauce gets thick. Add the beef cubes back to the pan and stir to coat them with the sauce. Add two to three more minutes of cooking. Add pepper and salt to taste. Put the beef tips on top of cooked rice and sprinkle chopped parsley on top.
