1 bunch broccolini, chopped coarsely
1 c. kalamata olives, halved
1 c. cherry tomatoes, halved
½ English cucumber (or standard cucumber seeded)
1 c. edamame/mukimame, defrosted, shelled
1 bunch scallions (green onions), thinly sliced - kitchen scissors speed this!
¼ c. Parmesan, shaved or grated
Option: Dressing - Tahini Balsamic Dressing - see prior blog post
In a large pot, bring water to a boil - add buckwheat. Cover, simmer 12 min. Take the buckwheat off the stove, letting stand 10 min. to finish cooking. Prepare dressing as described in prior blog post for Tahini Balsamic Dressing.
In a large fry pan, add oil and broccolini cooking until just tender - this will happen quickly! Add spinach tossing with broccolini until just wilted. Salt/pepper to taste. On a serving platter, layer buckwheat - broccolini/spinach. Artfully arrange olives, tomatoes, cucumbers, and edamame over this base. Top with scallions and Parmesan. Drizzle dressing over all and enjoy.
