Ingredients: 4 cod fillets. 2 tablespoons blackening seasoning. 2 tablespoons olive oil. 2 cups diced fresh pineapple. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 jalapeo, seeded and diced. Juice of 1 lime. Salt and pepper to taste.
Instructions: Preheat grill or grill pan over medium-high heat. Rub each cod fillet with blackening seasoning, ensuring even coating on both sides. Drizzle olive oil over the seasoned cod fillets. Place the cod fillets on the grill and cook for 4-5 minutes per side, or until fish flakes easily with a fork.
