Had a go at making @jack_monroe's veggie sausages from #Veganish. They're made with chestnuts, tofu, vegan cheese and stuffing mix. Tasted good. The Vegetarian thought they were lovely so that's a win, and even offered to help make them in future!!! Pretty straightforward recipe and method but took time to wait for mix to be ready so not a last minute dinner option (need just under an hour). Would possibly be less crumbly if you use normal stuffing mix - we were experimenting with an @asda #freefrom stuffing mix. Another good thing is the recipe made enough sausages for two meals so we have a batch now in the freezer for next time I'm in a hurry.
