Easy Croissant Breakfast Sandwiches-Savory & Quick
These gluten-free, dairy-free, and made with 100% whole grain banana pancakes are a tasty and healthy way to start the day. To make them, you use oat flour and ripe bananas and maple syrup to make them naturally sweet. Great for a quick breakfast during the week or a brunch on the weekend.
Ingredients: 1 cup oat flour. 1 ripe banana, mashed. 2 tablespoons maple syrup. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup almond milk. 1 teaspoon vanilla extract. 1 flax egg 1 tablespoon ground flaxseed + 3 tablespoons water. Coconut oil for cooking.
Instructions: Put baking powder, baking soda, salt, and oat flour in a bowl and mix them together. Add the mashed banana, maple syrup, almond milk, vanilla extract, and flax egg to a different bowl and mix them together using a whisk. Put the wet and dry ingredients together and mix them just until they are mixed. Put a nonstick griddle or skillet over medium-low heat and lightly coat it with coconut oil. For every pancake, put 1/4 cup of pancake batter on the pan. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. When the pancakes are still warm, top them with your favorite things, like fresh banana slices and maple syrup.
