I deviated slightly from the recipe - I added pea shoots to the bavarois, edamame to the salad, made my own mayo and kept the walnuts whole. I love crunchy and creamy combos and this definitely had that with the creamy bavarois and salty goats cheese with the crunch of the kataifi pastry. It’s also novel way to do goats cheese as opposed to the usual nuts or panko.
