No-Churn Strawberry Ice Cream
Baked eggs are an easy and affordable lazy weekend breakfast AND a great way to use up leftovers in your fridge.
I made this for Christmas brunch and it was a hit! The taste was good, the veggies were nice on a day/in a season full of sweats, and it was easy to make for a crowd.
Will definitely make again!

Meal prep all the things! Pictured: Stir fry from yesterday. Basic carrot and mushroom lo mein with whole wheat soba noodles and sticky ginger soy glazed chicken (budgetbytes) Baked beef and black bean tacos with taco rice (budgetbytes) Maple pumpkin spice syrup for my coffee in the morning Yogurt pecan spice muffins for breakfast (food and wine) Smoothie packs with 200 grams of various frozen fruit to be tossed in the blender with 6 oz of juice and maybe a quarter cup of yogurt. Tomorrow I will bake chicken breast to go into flat bread wraps to be served with a side salad and white cheddar puffs. If you are a student (or busy 20 something) I encourage you to try at least partial meal prepping- it's so much easier to at least have all my ingredients chopped and ready to go when I cook, even if I don't prep them in advance. And if you haven't heard of our lord and savior Aldi and BudgetBytes go to them immediately. I can cook pretty well but BudgetBytes has great recipes that are fairly inexpensive to make and teach you how to make things in different combinations to alleviate boredom.

I was just introduced to her site a few weeks ago when a friend brought this salad to dinner. I’m hooked. Everything on her blog looks absolutely delicious and I want to eat it all.
Only things I did different was skip the red pepper and red onion (which made it not really a rainbow anymore) and keep the crema on the side so it would keep better leftover.
I could eat this every day.
