Raclette is, in my opinion, one of the greatest achievements of humanity. So, Raclette is my favourite for sure. But I like most cheeses that are not blue. Taleggio was an old favourite, and got me through many of my undergrad days. Cheddar is of course a staple. Huge fan of paneer-based curries (and also just eating paneer like a cheese stick). Appenzeller is fantastic. But I really love the hard mountain cheeses with a strong foot smell you sometimes get from Swiss cheese vans—they definitely have names, but somehow I never managed to catch any of them.
