Indulge in the creamy decadence of milk chocolate ice cream loaded with chunks of salted cashew brittle. This luxurious treat combines the richness of chocolate with the crunch of cashews for an irresistible dessert experience.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 1/2 cup granulated sugar. Pinch of salt. 8 ounces milk chocolate, chopped. 1 teaspoon vanilla extract. 1/2 cup coarsely chopped salted cashews.
Instructions: In a saucepan, heat the heavy cream, whole milk, sugar, and salt over medium heat until it just begins to simmer, stirring occasionally. Remove from heat and add the chopped milk chocolate. Let it sit for a minute, then whisk until smooth and well combined. Stir in the vanilla extract. Transfer the mixture to a bowl and cover with plastic wrap, making sure the plastic wrap touches the surface of the mixture to prevent a skin from forming. Chill the mixture in the refrigerator for at least 4 hours or overnight until thoroughly chilled. Once chilled, churn the mixture in an ice cream maker according to manufacturer's instructions until it reaches a soft-serve consistency. In the last few minutes of churning, add the chopped salted cashews and let them incorporate into the ice cream. Transfer the churned ice cream to a container, cover, and freeze until firm, about 4 hours or overnight. Serve scoops of the milk chocolate ice cream topped with extra salted cashew brittle if desired.
