I’m always trying to jazz up my Salad game and this recipe did just that. This vibrant Spinach Salad w/Warm Brown Butter Dressing did just that. Sounds decadent and complex right? Wrong- I’m here to tell you this is one of the easiest dressings I’ve made and bonus points for warming my belly. Give it a try tonight! . ___________ Serves 4 - 1/2 pound baby spinach (about 5 cups) 1/4 cup shaved Pecorino Romano 1/4 cup toasted pecans 1/8 cup pickled red onions (get the recipe) 4 tablespoons (2 ounces) unsalted butter 1 teaspoon Dijon mustard 1 teaspoon honey 1 tablespoon balsamic vinegar . . Heat the butter in a small saucepan or skillet over medium heat. Once the butter has melted, begin whisking and continue cooking until it becomes light brown and smells nutty, about 3 minutes. Remove from heat and whisk in the mustard, honey, and vinegar until emulsified. Now that’s out of the way let’s talk about this dish! If food gets your mojo going then you’re in for a treat with this stewed cherry tomato and egg crostini. Okay, I just made that name up but sounds delish - no? . . RECIPE Stewed Cherry Tomatoes 2 tablespoons extra virgin olive oil 1 onion, chopped 2 cloves garlic, minced 1 1/2 pints cherry tomatoes 1/2 teaspoon dried parsley 1/2 teaspoon dried oregano 1/4 teaspoon dried basil 1/4 teaspoon crushed red pepper Salt and pepper to taste INSTRUCTIONS In a large skillet sauté onions in EVOO in medium heat until tender, add garlic sauté until fragrant, pour all other ingredients to the pan. Stir for 2 minutes - cover, lower heat and simmer for 10 minutes- the tomatoes should of burst at this point and any extra liquid would have evaporated. Toast up your sour dough bread, top with the stewed tomatoes and a fried egg. .
