This Paleo recipe calls for sauted garlicky greens over a creamy puree of cauliflower and celery root. It's a tasty and wholesome side dish that goes well with any Paleo dinner.
Ingredients: 1 celery root, peeled and cubed. 1 cauliflower head, cut into florets. 2 cloves garlic, minced. 2 tablespoons ghee or coconut oil. 1 bunch of kale or collard greens, stems removed and leaves chopped. 1/4 cup chicken or vegetable broth. Salt and pepper to taste.
Instructions: Add the cauliflower florets and celery root to a large pot of boiling water. Cook for 15 to 20 minutes, or until they are tender. Empty. Heat coconut oil or ghee in a skillet over medium heat. Add the minced garlic and cook for one to two minutes, or until fragrant. To the skillet with the garlic, add the cooked celery root and cauliflower. Add salt and pepper for seasoning, then cook, stirring occasionally, for a further two to three minutes. Spoon mixture into food processor; process until smooth. If you want your consistency to be just right, you can add a splash of broth. Put aside. Add 1/4 cup of broth and the chopped greens to the same skillet. Simmer the greens for 5 to 7 minutes over medium heat, or until they are soft and wilted. Add pepper and salt for seasoning. Present the smooth puree of cauliflower and celery root, garnished with aromatic greens. Savor the Celery Root and Cauliflower Puree on the Paleo diet, paired with Crispy Greens!
