So this is what became of the chicken confit that I made the other night. I slowly simmered the chicken in olive oil for 10 hours...it becomes as silky as butter. Then you store it in the same pan and let the oil harden all around it, this will keeps for several weeks this way and it only gets better! Put a piece in a cast iron pan with lots of the fat from the casserole dish and add some chipped sweet potatoes and onions. Fry it until its all crispy and fork tender ( about 15 minutes) and serve with French mustard on top of a bed of fresh greens. This is sprinkled with a delectable roasted orange zest salt that you’ll be able to buy at the #westernreserveherbsociety #herbfair on October the 13th!
