Ingredients: 1 lb ground chicken. 1 cup shredded cheddar cheese. 1/4 cup almond flour. 2 cloves garlic, minced. 1/4 cup chopped parsley. 1/4 cup grated Parmesan cheese. 1 large egg. Salt and pepper to taste. 2 tbsp olive oil for frying.
Instructions: In a large bowl, mix together ground chicken, shredded cheddar cheese, almond flour, minced garlic, chopped parsley, grated Parmesan cheese, and a beaten egg. Season the mixture with salt and pepper to taste, and combine well. Heat olive oil in a skillet over medium heat. Scoop about 1/4 cup of the chicken mixture and form it into a patty. Place it in the skillet and flatten gently with a spatula. Cook the fritters for about 4-5 minutes on each side, or until they are golden brown and cooked through. Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil. Serve hot and enjoy!
