This is a tasty stir-fry recipe that combines colorful bell peppers and tender chicken with the sweet and spicy flavors of sriracha and honey. This dish is quick and simple to prepare, making it ideal for a weeknight supper.
Ingredients: 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces. 2 bell peppers red and green, sliced. 2 tablespoons vegetable oil. 1/4 cup honey. 2 tablespoons sriracha sauce. 2 cloves garlic, minced. 1 tablespoon soy sauce. 1 tablespoon cornstarch. Salt and pepper, to taste. Sesame seeds and chopped green onions for garnish optional.
Instructions: In a small bowl, mix together honey, sriracha sauce, minced garlic, soy sauce, and cornstarch to create a sauce. Set aside. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces to the hot skillet and stir-fry for 4-5 minutes or until they are cooked through and lightly browned. Remove chicken from the skillet and set aside. In the same skillet, add sliced bell peppers and stir-fry for 2-3 minutes or until they start to soften but remain slightly crisp. Return the cooked chicken to the skillet with the bell peppers and pour the honey sriracha sauce over the chicken and peppers. Stir to coat evenly and continue cooking for another 2-3 minutes until the sauce thickens and everything is heated through. Season with salt and pepper to taste. Garnish with sesame seeds and chopped green onions if desired. Serve hot over steamed rice or noodles. Enjoy!
