Ingredients: 2 cups pretzels, crushed. 1 quart vanilla ice cream. 1 cup chocolate chips. 2 tablespoons coconut oil. 1/4 cup chopped nuts optional.
Instructions: In a bowl, mix crushed pretzels with vanilla ice cream until well combined. Transfer the mixture into a shallow container and freeze for at least 4 hours or until firm. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth. Once the ice cream is firm, scoop it into balls and place them on a parchment-lined baking sheet. Drizzle the melted chocolate over each ice cream ball and sprinkle with chopped nuts if desired. Return the baking sheet to the freezer and freeze until the chocolate sets, about 10-15 minutes. Serve as is or sandwich between pretzel crisps for a delicious choc-top experience!
