Delight in the chewy and sweet goodness of homemade coconut macaroons. These treats are easy to make and perfect for coconut lovers.
Ingredients: 3 cups shredded coconut. 3/4 cup sweetened condensed milk. 2 teaspoons vanilla extract. 2 egg whites. 1/4 teaspoon salt.
Instructions: Warm the oven up to 325F 165C and put parchment paper on a baking sheet. Shred the coconut and mix it with the sweetened condensed milk and vanilla extract in a bowl. Mix well until everything is well mixed. Beat the egg whites and salt together in a different bowl until stiff peaks form. Slowly add the egg whites that have been beaten to the coconut mixture until it is all well mixed together. With a spoon or cookie scoop, drop heaping tablespoonfuls of the dough onto the baking sheet that has been prepared. Leave some space between each cookie. After the oven is hot, bake the cookies for 15 to 20 minutes, or until the edges turn golden brown. After taking the macaroons out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. When the macaroons are completely cool, you can dip the bottoms of them in melted chocolate if you want to. Then, put them on parchment paper to set. Enjoy your tasty coconut macaroons that you made yourself!

Ingredients: 3 cups shredded coconut. 1 can 14 ounces sweetened condensed milk. 1 teaspoon vanilla extract. 2 large egg whites. 8 ounces semisweet chocolate, melted.
Instructions: Preheat the oven to 325F 165C and line a baking sheet with parchment paper. In a large bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until all the ingredients are fully incorporated. In a separate bowl, use an electric mixer to beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the coconut mixture until everything is evenly combined. Using a spoon or a cookie scoop, drop small mounds of the coconut mixture onto the prepared baking sheet, spacing them a couple of inches apart. Bake in the preheated oven for about 15-20 minutes, or until the edges of the macaroons are golden brown. Remove the macaroons from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the macaroons are completely cooled, dip the bottom half of each macaroon into the melted semisweet chocolate, allowing any excess chocolate to drip off. Place the chocolate-dipped macaroons on a parchment-lined tray and let them sit at room temperature or in the refrigerator until the chocolate is set. Once the chocolate is set, your coconut macaroons dipped in chocolate are ready to be enjoyed!

These Coconut Macaroon Nests are a tasty treat for any event, not just Easter. On top of the sweet, chewy cookies are chocolate eggs for a fun holiday touch.
Ingredients: 2 cups shredded coconut. 1/2 cup sweetened condensed milk. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 4 large eggs. 1/4 cup chocolate chips. 12 mini chocolate eggs for decoration.
Instructions: Preheat your oven to 325F 160C. In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well. In a separate bowl, beat the 4 large eggs and then add them to the coconut mixture. Stir until everything is well combined. Spoon the mixture into greased muffin tin cups, creating a nest-like shape in each one. Bake in the preheated oven for about 20-25 minutes or until the edges are golden brown and the nests are set. Remove the nests from the oven and let them cool in the muffin tin for a few minutes. While the nests are still warm, press a few chocolate chips into the center of each nest to create a well for the eggs. Let the nests cool completely in the muffin tin. Once the nests are cool, place mini chocolate eggs in the center of each one. Your Coconut Macaroon Nests are ready to be enjoyed!
