This healthy and tasty parfait has the nuttiness of quinoa, the sweetness of mixed berries, and the creaminess of Greek yogurt. Great for a healthy breakfast or a snack to keep you cool.
Ingredients: 1 cup cooked quinoa. 1 cup mixed berries strawberries, blueberries, raspberries. 1 cup Greek yogurt. 2 tablespoons honey. 1/4 cup granola. Mint leaves for garnish.
Instructions: In a glass or bowl, layer 1/4 cup of cooked quinoa at the bottom. Add a layer of mixed berries on top of the quinoa. Spoon 1/4 cup of Greek yogurt over the berries. Drizzle 1/2 tablespoon of honey over the yogurt layer. Repeat the layers until the glass or bowl is filled. Top the parfait with granola for added crunch. Garnish with mint leaves. Serve immediately and enjoy!
