Like this vegan crab cake that yours truly made for dinner last night. It’s a base of chickpeas and hearts of palm, giving it the look and consistency of crab meat but with zero cruelty! Topped with a home made tartar sauce and placed on a bed of asparagus, I was a happy fatty last night. Side note: I check the cans of the palm hearts to make sure they are sustainably harvested so that whole trees aren’t cut down but rather cultivated from a base plant and doesn’t kill the tree.
