🇺🇸 Thinking about what to have for lunch today, tomorrow, or whenever? This is the perfect time to eat some roasted root veggies or veggies as such to get all the needed vitamins and minerals. I for one had a huge pumpkin sitting in my fridge and waiting to be used for months, and I decided to just go for it. Normally, I’m not a big fan of foods where pumpkin is the main ingredient, but turns out it all comes down to the cooking style and extras. I fried mine on pan with some cinnamon and curry mix on top but roasting it in the oven would be better. Then I added some greens and poured over some rice cream mixed with a couple of tsp of nutritional yeast. The latter made all the difference in taste.
