Tuna Po' Boy Salad Bowls are a delightful twist on the classic Po' Boy sandwich. This salad combines flaked tuna, fresh vegetables, and a zesty sauce, all served over a bed of greens and crispy croutons.
Ingredients: 2 cans of tuna, drained and flaked. 4 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1/2 cup sliced cucumber. 1/2 cup sliced red onion. 1/4 cup sliced pickles. 1/4 cup sliced black olives. 1/4 cup chopped fresh parsley. 4 sandwich rolls, sliced into crouton-sized pieces. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon hot sauce. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Preheat your oven to 375F 190C. Toss the sliced sandwich rolls with olive oil, salt, and pepper, then spread them on a baking sheet. Bake in the preheated oven for 10-15 minutes or until they become crispy croutons. Set aside. In a large bowl, combine the drained tuna, mayonnaise, Dijon mustard, and hot sauce. Mix until well combined. Adjust the sauce's spiciness to your preference by adding more hot sauce if desired. In individual salad bowls, arrange a bed of mixed salad greens. Top the greens with the tuna mixture, cherry tomatoes, sliced cucumber, red onion, pickles, black olives, and chopped parsley. Sprinkle the crispy croutons over the top of each salad bowl. Finish with a pinch of salt and pepper to taste. Serve the Tuna Po' Boy Salad Bowls immediately, and enjoy!
