ITS SPRING TIME! One of my favorite things of the season has to be peas! The other is just how light and flavorful spring dishes can be. If you can’t find fresh peas frozen are totally okay. Cooking for one? This is perfect for you. Easy fast meal? This is it. The colors are beautiful and most importantly the flavors are simple and delicious. Now you can make this on a budget if you sub out some of my bougie staples, or you can TREAT YO SELF and make it the Lovia way. Let’s get started.

Into salted boiling water add some quality spaghetti, cook for about 8 minutes and strain, keep a cup of the pasta water for the “sauce”. Open the Ortiz tuna (I promise it’s worth the price, it is quite honestly the best canned tuna I’ve ever had). Strain about half the oil and dump the rest with the meat into the pan on medium heat. Add 2 cloves grated garlic, peas, sliced radishes, and scallions. Toss unitl radishes begin to turn clear, add pasta and 1/2 c of the pasta water. Toss, squeeze of lemon, pepper, ghost pepper Jacobsen sea salt, and some fresh pecorino to top it off. And just like that its time to eat.

Side note, if you need more of a saucy consistency add more pasta water.
