For Christmas morning brunch, this Spinach Goat Cheese Quiche Tart is a great addition. The flaky puff pastry crust goes well with the creamy, savory filling of goat cheese, spinach, and spices that smell great. It's simple to make and will look great for your guests!
Ingredients: 1 sheet of frozen puff pastry, thawed. 5 ounces fresh spinach, chopped. 4 ounces goat cheese, crumbled. 4 large eggs. 1 cup heavy cream. Salt and pepper to taste. Pinch of nutmeg.
Instructions: Before you start cooking, heat the oven to 375F 190C. Spread the puff pastry out on a work surface and press it into a tart pan. Cut off any extra pastry. Hit the bottom of the dough with a fork, and then bake it without any light on top for 10 minutes. Put the chopped spinach in a skillet and cook it until it wilts. Then, drain off any extra liquid. Spread the spinach out evenly on top of the crust that has been baked. Add goat cheese crumbles on top of the spinach. Add eggs, heavy cream, salt, pepper, and nutmeg to a bowl and mix them together using a whisk. Put the egg mix on top of the goat cheese and spinach. When it's done, the top should be golden brown and the filling should be set. Let it cool a bit before cutting it up and serving it.
