This quick chickpea curry is packed with flavor and perfect for a weeknight dinner. It's creamy, hearty, and satisfying.
Ingredients: 1 can chickpeas, drained and rinsed. 1 can coconut milk. 1 onion, diced. 2 cloves garlic, minced. 1 tbsp curry powder. 1 tsp ground turmeric. 1 tsp ground cumin. 1 tsp ground coriander. 1 cup diced tomatoes. 1 cup vegetable broth. Salt and pepper to taste. Cooked rice or naan, for serving.
Instructions: In a large skillet, saut onion and garlic until softened. Add chickpeas, curry powder, turmeric, cumin, and coriander, cook for 2 minutes. Pour in coconut milk, diced tomatoes, and vegetable broth. Simmer for 15-20 minutes until flavors meld and sauce thickens. Season with salt and pepper to taste. Serve over cooked rice or with naan.
