Chicken Parmesan tonight! I got a late start because we were swimming. Here’s some chicken breasts sliced in half horizontally and dropped into an egg wash with garlic, Italian parsley, salt & pepper. The chicken was in the wash for about and hour. I then coated both sides with some panko, breadcrumbs, grated Parmesan and garlic powder. I fried these in olive oil at 400 for about 2-3 minutes a side in a @lodgecastiron skillet. The chicken was then baked at 425 for about 20 minutes with a layer of @mezzetta Marinara and topped with mozzarella, shredded Parmesan and Italian parsley. Served on spaghetti.
