i’ve been having a really hard time concentrating recently, libraries are close and i can’t got to any parks because it’s been raining like crazy
i’m actually desperate to find any motivation but in my house there are too many distractions
any tips on how to stay focused?

BLT Chicken Salad
This genius idea came from Sweet & Savory Steph - mixing BLTs and chicken salad? Summer lunch perfection. I made a few adjustments based on my preferences and what I had on hand but same idea!
Ingredients
3-4 boneless, skinless chicken breasts
1/2 large red onion
6-8 slices of bacon
1/2 pint of grape tomatoes, quartered
1/3 c. light mayonnaise
2/3 c. nonfat greek yogurt
1 T. apple cider vinegar
healthy pinches of: salt, pepper, garlic powder, onion powder, paprika
lettuce for serving in cups or wraps
Directions
1. Poach the chicken breasts in salted water until cooked through. Once cooked, chop, dice or shred and let cool.
2. Dice the red onion and sautee until caramelized. Let cool.
3. Cook the bacon until very crisp (I like to bake mine!). Crumble or roughly chop.
4. In a large mixing bowl, whisk together the mayonnaise, greek yogurt, vinegar, salt, pepper, garlic powder, onion powder and paprika until well combined.
5. Toss in chicken, onion, bacon, tomatoes and stir together until everything is coated.
6. To make it ring true as a BLT, serve on lettuce as a salad, wrap or cup! Or... feel free to go rogue and put it on a sandwich, eat it with crackers or straight out of the bowl.

For dinner I just made a Greek salad, well kind of, (lettuce, cucumber,tomatoes,black olives, carrots,feta cheese) and added a piece of baked squash and a little bit of fish.
Topped it off with balsamic vinegar.

Okay, I get that the price was unreasonable, and that these scams do exist, and that Mail readers generally love them a bit of "sticking it to Johnny Foreigner".......but maybe proudly writing in to a national newspaper to freely admit to lying to your bank for financial gain might *not* be a great idea?
