I'd imagine that undead who've had proper burial rites or who have been buried in religious places would be resistant or immune to the holy damage that undead are usually weak to. Would also make them an absolute pain to deal with, which could also be a good way of like increasing the difficulty of a group of basic enemies

You know what'd be a messed up weird enemy to have to fight?
A disembodied floating pare of giant dentures that just bite people, not particularly hard, but hard enough to be painful and annoying and weird.
Also much like the earlier floating eyeball enemy, I thought up, I'd imagine these weird things only exist due to magic as there's no real way for them to survive biologically.
CW: Scarecrows
Why not have some multifunctional scarecrows, ones which don't just scare crows away but also any potential intruders, how you may ask?
Give them the ability to move and maybe attack if they feel like it. Although to have them do that effectively they should probably also be built differently to regular scarecrows so that they don't end up rapidly destroying themselves by the simple process of moving their limbs.
Also give them like an obvious weak point like a wooden mask or panel with a magic symbol carved onto it which has to be taken of or smashed otherwise they'll just keep on attacking until they're shredded clothes and straw. You could also probably do the same thing with dolls or mannequins or statues or stuff like that, but just with faces replaced with the symbol thing so there's the extra creepiness of facelessness.
