Ingredients: 1 cup quinoa. 1 can white beans, drained and rinsed. 4 cups vegetable broth. 1 bunch kale, stems removed and leaves chopped. 1 onion, diced. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, saut until translucent. Add quinoa to the pot and toast for 2 minutes. Pour in vegetable broth and bring to a boil. Reduce heat to simmer, cover, and cook for 15 minutes. Stir in white beans, kale, and dried thyme. Simmer for an additional 10 minutes until kale is tender. Season with salt and pepper to taste. Serve hot.
