Bûche de Noël You may know this as a Yule Log in America. The Bûche de Noël is a traditional Christmas cake. The cake emerged in the 19th century, more than likely in France, before spreading to other countries. Normally make from yellow sponge cake which is baked in a large shallow Swiss roll pan, then iced, rolled and iced again with chocolate buttercream. You can vary this depending on the look you want. This cake is chocolate with vanilla buttercream icing on the initial icing, then chocolate on the outside. You can even elevate with espresso or liqueurs if you are brave enough! The key is to get creative and have fun! Use a fork to make the outside icing look like bark from a tree. Dust with some cocoa powder for that 'dirt' look. You can make and add merengue mushrooms, use white chocolate wafers for flat mushrooms, 'frosted' candies for the berries.
