Have you ever cooked with filo dough? I always thought it would be so challenging but truly it’s not! We bought some vegan filo dough and over the course of a few days I made both savory and sweet treats. The savory dish is a tofu and spinach dish (sort of like a Spanakopita) and the sweet a little pocket of cherry pie filling. If you want to make a really pretty pastry or dinner dish consider making it with filo dough!

Stuffed Phyllo Dough
This is a traditional Middle Eastern/North African dish that I have always loved sampling at dinner parties. It always seemed too complicated to try to do myself but when I finally tried it, I was impressed with how relatively easy it was to assemble. This dish, called goulash in Arabic (not to be confused with the macaroni/beef dish) is versatile and can be made using numerous fillings (seasoned ground beef, spinach and cheese, or cheese and olives). I will definitely be making this at future dinner parties.
Ingredients:
1 box of Phyllo dough sheets
½ cup vegetable oil
1 cup milk
1 egg
Salt and pepper to taste
Fillings:
Spinach and cheese:
3 cups spinach, chopped
½ ripe avocado
2 cups shredded mozzarella cheese
sumac powder, to taste
salt, to taste
½ a onion, chopped
Sauté onion until light brown and then mix in spinach until cooked. Add sumac, salt, cheese, and mashed avocado. Mix very well.
Cheese and olives:
3 cups shredded cheese
½ cup Parmesan cheese
1 cup pitted and chopped Kalamata olives
½ cup fresh chopped parsley
Mix the above ingredients well. Taste and add salt if desired.
Ground beef:
1 pound ground beef, browned
½ onion, chopped
salt, pepper and garlic powder to taste
½ cup fresh chopped parsley
Saute onion until brown and add ground beef. Cook thoroughly, then add salt, pepper, garlic powder, and chopped parsley
Directions:
1. Preheat oven to 350 F.
2. Grease cookie sheet. Add two sheets of Phyllo dough then brush with some oil. Add two more sheets, and brush with more oil. Continue this process until half of the filo dough sheets have been used.
3. Add filling of choice (see ingredients above).
4. Layer the remaining Phyllo dough sheets in a similar fashion to step 1 (two sheets, oil brushed on, repeat)
5. Cut the Phyllo dough into squares.
6. Mix milk, egg, salt and pepper in a bowl and then pour over Phyllo dough.
7. Bake for 1 hour until top layer is golden.
